Job Description

Provide support to the Butchery Chef de Partie in completing daily preparation duties involving meat, poultry, and seafood.

Responsibilities include receiving, thoroughly inspecting, and properly storing meat products while ensuring compliance with quality, hygiene, and food safety regulations.

Responsibilities include accurately trimming, portioning, deboning, and cutting meat products in strict accordance with established specifications to ensure optimal handling and quality standards.

Prepare meat cuts, marinades, and mile en place in accordance with the specifications for various hotel outlets and banqueting services.

Facilitate the assembly and readiness of supplies, equipment, and materials essential for the smooth operation of restaurants, room service, events, and large-scale functions.

Ensure accurate labeling, proper dating, and systematic storage rotation in compliance with FIFO (First In, First Out) protocols.

All butchery equipment, tools, and work areas must be cleaned and sanitized in strict compliance with HACCP standards.

Efficiently utilize products and adhere to portion control guidelines to minimize wastage.

Help conduct inventory counts, perform stock audits, and report any discrepancies or quality concerns promptly.

Maintain strict adherence to temperature control protocols for both chilled and frozen products to ensure compliance with safety and quality standards.

Ensure adherence to established personal hygiene and grooming standards as outlined in hotel policies.

Maintain adherence to all food safety, health, and safety regulations to ensure full compliance.

Qualifications

A culinary arts or food production certificate or diploma, or an equivalent qualification, is required.

Applicants must possess prior work experience in a hotel setting, restaurant operations, or a high-volume kitchen environment.

Proficient understanding of various meat cuts, expertise in butchery methods, and adherence to proper product handling procedures are required.

Professional individuals should possess familiarity with food safety and hygiene protocols, with a preference for expertise in Hazard Analysis and Critical Control Points (HACCP) principles.

Proficient in safely and accurately operating knives and butchery equipment.

Possesses comprehensive experience in kitchen operations and proficiently prepares mile en place with precision.

Demonstrated resilience and composure when managing multiple tasks in a high-pressure, dynamic hotel setting.

Demonstrates meticulous attention to detail and unwavering dedication to upholding quality benchmarks.

Effective collaboration and clear, concise communication are essential for this role, enabling seamless coordination and productive interactions within the team.

Demonstrates adaptability to varying shift schedules, encompassing weekends and public holidays, as required.

Must demonstrate proficiency in upholding workplace cleanliness, organization, and discipline to foster a productive and efficient environment.
