Provide support to the Butchery Chef de Partie in executing daily preparation duties for meat, poultry, and seafood items.

Responsibilities include accepting, evaluating, and safely storing meat products while ensuring adherence to rigorous quality control, hygiene, and food safety protocols.

Ensure adherence to precise standards for the handling, trimming, portioning, deboning, and cutting of meat products in accordance with established specifications.

Prepare a variety of meat cuts, develop marinades, and organize mile en place to support the diverse culinary demands of hotel outlets and banqueting events.

Facilitate the organization and assembly of supplies, equipment, and materials for restaurants, in-room dining services, events, and extensive catering operations.

Ensure accurate labeling, timely dating, and proper storage rotation by adhering to FIFO (First In, First Out) protocols.

Maintain strict adherence to HACCP guidelines by thoroughly cleaning and sanitizing all butchery equipment, tools, and work areas.

Efficiently utilize products while adhering to portion control guidelines to minimize wastage.

Provide support in conducting stock counts, performing inventory audits, and documenting any discrepancies, such as shortages or quality concerns, in detailed reports.

Maintain precise temperature control for both chilled and frozen products in accordance with established protocols.

Ensure adherence to established hotel policies regarding personal hygiene and grooming standards.

Maintain adherence to all applicable food safety, health, and safety regulations to ensure full compliance.

Bachelor’s degree in Computer Science, Information Technology, or a related field is required. Minimum of 3 years of experience in software development, preferably with a focus on mobile applications or backend services, is essential. Proficiency in programming languages such as Java, Python, or JavaScript is necessary, along with experience with frameworks like React Native, Django, or Spring Boot. Strong problem-solving abilities and excellent communication skills are critical for collaborating effectively in a team environment. Familiarity with cloud platforms such as AWS, Azure, or Google Cloud is a plus.

A relevant qualification, such as a Certificate or Diploma in Culinary Arts, Food Production, or a closely related field, is required.

Applicants must possess prior experience in a hotel, restaurant, or high-volume kitchen setting.

Proficiency in meat cuts, butchery methods, and proper product handling techniques is required.

Proficiency in food safety and hygiene protocols, with a preference for candidates possessing HACCP certification, is required.

Proficient in the safe and accurate use of knives and butchery equipment is required.

Proficient in kitchen operations and the meticulous preparation of mile en place.

Proven capability to maintain composure and productivity in high-pressure, high-velocity hotel settings while meeting tight deadlines and exceeding guest expectations.
