Job Description

Drives operational and financial performance by overseeing key business metrics, analyzing market trends, and implementing strategies to enhance productivity and profitability. Identifies areas for improvement, devises actionable plans, and ensures alignment with organizational objectives. Collaborates with cross-functional teams to execute initiatives, monitor progress, and deliver measurable results. Requires strong analytical skills, proficiency in data interpretation, and the ability to translate insights into strategic decisions. Develop and maintain periodic budgets and forecasts on a regular basis to support strategic planning and decision-making processes.

Monthly, conduct a thorough examination of the Profit & Loss statements and month-end financial reports to assess performance against established business plan objectives, pinpointing any variances.

Attend strategic management meetings to evaluate progress toward fulfilling business plan objectives and collaborate on the formulation of the department’s annual business plan.

Operation

Develop and maintain the departmental Standard Operating Procedures (SOP) Manual, which outlines performance benchmarks, policies, procedures, and service standards essential for the kitchen’s effective operation. Ensure alignment with the hotel’s established policies, quality benchmarks, and regulatory obligations mandated by municipal authorities.

Collaborate closely with the Senior Culinary Team to spearhead the creation of innovative menus and drive product development initiatives, ensuring each effort is underpinned by thorough analysis and precise costing.

Prepare and execute strategic food promotions to drive engagement and sales, ensuring each initiative is effectively planned and implemented.

Ensure departmental areas are consistently organized and maintained by performing weekly walkthroughs to uphold cleanliness standards and operational efficiency.

Maintain strict adherence to high food safety management standards and rigorous hygiene precautions in compliance with the hotel’s food safety and HACCP protocols across the department.

Ensure that food standards are consistently maintained across all Outlets.

Ensure all departmental reports, schedules, standard recipes, menus, food presentation photographs, and correspondence are completed promptly and accurately.

Assess evolving consumer demands and emerging culinary trends to develop menu strategies tailored to hotel guests and the local community.

Collaborate with leadership across various departments within your scope of responsibility to cultivate and sustain productive professional relationships.

Engage with local community stakeholders and prospective guests as needed to foster positive relationships and address inquiries.

Overseeing additional duties and tasks may also fall within the scope of this position, ensuring comprehensive support for team objectives and operational efficiency. These responsibilities could include managing documentation, coordinating meetings, or assisting with project execution, among other essential functions. The role may require adaptability to evolving priorities and the ability to collaborate effectively with cross-functional teams to maintain productivity and alignment with organizational goals.

To ensure comprehensive proficiency, demonstrate an in-depth understanding of all food and beverage services, including their contents, preparation techniques, operational outlets, and the hotel’s diverse services and features.

Adhere rigorously to the established hotel food safety and hygiene protocols, specifically the Hazard Analysis Critical Control Point (HACCP) guidelines, to ensure compliance and mitigate potential risks.

Possess comprehensive knowledge of hotel fire and life safety protocols, as well as emergency response procedures.

You are required to participate in all briefings, meetings, and training sessions as directed by management.

Uphold an impeccable standard of personal presentation and cleanliness at all times.

Execute any additional tasks deemed appropriate and assigned by Hotel Management.

Qualifications

A proven track record in culinary excellence within high-end brand environments, coupled with a keen ability to continuously adapt to evolving culinary innovations.

Demonstrates exceptional leadership and communication abilities while upholding the company’s standards and ensuring the effective enforcement of policies.
