Provide support to the Butchery Chef de Partie in executing daily preparation tasks for meat, poultry, and seafood.

Responsibilities include accepting, evaluating and properly storing meat products in adherence to stringent quality, hygiene and food safety protocols.

Ensure accurate preparation of meat products by adhering to specified handling, trimming, portioning, deboning, and cutting procedures.

Prepare a variety of meat cuts, develop marinades, and organize mile en place to support the diverse needs of hotel outlets and banqueting services.

Assist in the curation and organization of materials essential for restaurant operations, room service deliveries, event planning, and large-scale occasions.

Ensure accurate labeling, proper dating, and adherence to storage rotation protocols by implementing the FIFO (First In, First Out) methodology.

Ensure all butchery equipment, tools, and work areas are cleaned and sanitized in strict compliance with HACCP standards.

Maximize efficiency by implementing strict portion control measures and minimizing product waste through careful utilization.

Supports stock counts, inventory verifications, and the documentation of any shortages or quality concerns as they arise.

Ensure strict adherence to temperature control protocols for both chilled and frozen products.

Uphold impeccable personal hygiene and grooming in strict adherence to the hotel’s established standards.

Maintain adherence to all food safety, health, and safety regulations to ensure full compliance.

Qualifications

A Culinary art, Food Production, or related qualification, whether a certificate or diploma, is required.

Candidates should possess prior experience in a hotel, restaurant, or other high-volume kitchen setting.

A foundational understanding of various meat cuts, butchery methods, and proper product handling procedures is required.

Proficiency in food safety and hygiene standards, ideally with a working knowledge of HACCP principles, is required.

Proficient in the safe and accurate utilization of knives and butchery equipment.

Proficient in kitchen operations and adept at mile en place preparation to ensure efficient workflow and adherence to culinary standards.

Demonstrates resilience and adaptability when operating within a high-pressure, dynamic hotel setting.

Demonstrates meticulous attention to detail and a steadfast dedication to upholding rigorous quality standards.

Exceptional collaborative abilities and strong interpersonal communication skills are essential for this role. The ideal candidate must demonstrate proficiency in working effectively within a team environment and conveying ideas clearly and concisely.

Demonstrates adaptability to varying shift schedules, encompassing weekends and public holidays.
