Job Description
Provide support to the Butchery Chef de Partie by handling daily meat, poultry, and seafood preparation duties.
Receive, inspect, and store meat products while adhering to stringent quality, hygiene, and food safety protocols.
Ensure meticulous handling, precise trimming, accurate portioning, thorough deboning, and expert cutting of meat products in strict accordance with established specifications.
Prepare a variety of meat cuts and marinades in accordance with the specifications of various hotel outlets and banqueting events, ensuring all necessary mile en place is meticulously organized and ready for service.
Assist in preparing items for restaurant service, room service orders, special events, and large-scale functions.
Ensure accurate labeling, proper dating, and adherence to FIFO (First In, First Out) storage rotation protocols at all times.
Ensure thorough cleaning and sanitation of all butchery equipment, tools, and workspaces in strict adherence to HACCP guidelines.
Efficient utilization of products and strict adherence to portion control guidelines are essential to minimize wastage.
Contribute to inventory management by performing stock counts, conducting thorough inventory checks, and documenting any shortages or quality concerns for further action.
Maintain strict adherence to temperature control protocols for both chilled and frozen products.
Ensure adherence to established hotel standards regarding personal hygiene and grooming practices.
Maintain adherence to all applicable food safety, health, and safety regulations at all times.
Seeking candidates with a minimum of three years of relevant experience in a similar role, along with a proven track record of delivering high-quality results. Proficiency in industry-standard software and tools is essential, as is the ability to work effectively both independently and collaboratively within a team. Strong problem-solving skills and adaptability to evolving priorities are required. Excellent communication abilities, both written and verbal, are necessary to convey ideas clearly and interact with stakeholders at all levels. A bachelor’s degree in a related field or equivalent professional experience is preferred, though consideration will be given to exceptional candidates without a formal degree.
Applicants must possess a Certificate or Diploma in Culinary Arts, Food Production, or an equivalent qualification.
Prior experience in a hotel, restaurant, or other high-volume kitchen setting is required.
Proficiency in various meat cuts, butchery methods, and proper product handling procedures is required.
Proficient knowledge of food safety and hygiene standards, with a preference for candidates possessing HACCP certification.
Proficient in the safe and proper use of knives and butchery equipment is required.
