Develop and maintain periodic budgets and financial forecasts on a regular basis.
Analyze monthly profit and loss statements alongside month-end reports to pinpoint any discrepancies from established business plan objectives.
Attend executive meetings to evaluate advancements in meeting the department’s strategic objectives and collaborate on drafting the annual business plan.
Operation
Develop and maintain the departmental Standard Operating Procedures (SOP) Manual, ensuring it encompasses performance benchmarks, policies, procedures, and service standards that uphold the efficient functioning of the kitchen. This role requires strict adherence to the hotel’s established guidelines, standards, and regulatory obligations mandated by local authorities.
Collaborate closely with the Senior Culinary team to spearhead the creation of innovative menus and drive product development initiatives, ensuring meticulous analysis and precise costing are implemented throughout the process.
Responsible for directing the strategic planning and execution of impactful food promotions.
Conduct weekly walk-throughs to ensure departmental areas remain organized and clean, maintaining a consistently tidy and efficient workspace.
Uphold stringent food safety protocols and hygiene standards, in compliance with the hotel’s HACCP guidelines, to ensure the department consistently meets the highest safety and hygiene requirements.
Ensure compliance with established food standards across all Outlets, maintaining high levels of quality and safety in food preparation and service.
All departmental reports, schedules, standard recipes, menus, food presentation photographs, and correspondence must be prepared meticulously and submitted within established deadlines to maintain operational efficiency.
Conduct thorough market research to assess evolving food menu demands and emerging trends for hotel guests as well as the local community.
Collaborate with departmental leadership across various functional areas to cultivate and uphold productive professional relationships.
Engage with local community representatives and prospective guests as needed to facilitate positive interactions and gather valuable insights.
Manages various additional duties as assigned, ensuring all tasks are completed accurately and punctually.
Ensure comprehensive expertise in all food and beverage services, including their contents, preparation techniques, available outlets, and the hotel’s various services and features.
Adhere rigorously to established hotel food safety and hygiene protocols, specifically those outlined under the Hazard Analysis and Critical Control Points (HACCP) framework, to ensure full compliance and mitigate potential risks.
Possess comprehensive knowledge of hotel fire and life safety protocols, as well as emergency response procedures.
Must participate in all briefings, meetings, and training sessions designated by management.
Consistently uphold impeccable standards of personal grooming and cleanliness at every moment.
Execute any additional tasks deemed appropriate and assigned by Hotel Management.
Seeking a highly motivated individual with a minimum of five years of relevant experience in a leadership role, along with a proven track record of driving operational efficiency and fostering team collaboration. The ideal candidate will possess a strong analytical mind, exceptional problem-solving abilities, and outstanding communication skills. A bachelor’s degree in a related field is required, and advanced certifications or specialized training are highly preferred. Responsibilities include developing strategic initiatives to optimize workflows, mentoring team members to enhance performance, and ensuring alignment with organizational goals. Proficiency in industry-standard software and tools, along with the ability to adapt to evolving business needs, is essential.
