The À la carte Executive Sous Chef position is a full-time, on-site role situated at Jumbo Ruins Monsoon in Mombasa County, Kenya. This role assists the Executive Chef in overseeing the à la carte kitchen operations, maintaining stringent food quality, consistency, and presentation standards for all made-to-order dishes. Key duties encompass menu planning and execution with a focus on seafood, supervising food preparation and cooking processes, and directing kitchen sections during peak service hours.

The Executive Sous Chef provides leadership and guidance to kitchen staff, implements and maintains mile en place procedures, and upholds rigorous food safety, hygiene, and cost control protocols. Additionally, the position contributes to menu innovation, facilitates seamless communication with front-of-house personnel to optimize service flow, and remains responsive to guest insights and seasonal ingredient fluctuations.

Seeking a candidate with a Bachelor’s degree in Computer Science, Engineering, or a related field, complemented by at least three years of hands-on experience in software development. Proficiency in programming languages such as Python, Java, or C++ is essential, along with a strong grasp of data structures and algorithms. Familiarity with version control systems like Git and experience with Agile methodologies are required. The ideal applicant will demonstrate excellent problem-solving skills, effective communication abilities, and a proven track record of delivering high-quality software solutions. Responsibilities include designing, developing, and maintaining robust software applications, collaborating with cross-functional teams to gather requirements, and ensuring adherence to best practices in coding and testing.

Demonstrates exceptional proficiency in à la carte preparation, backed by extensive experience in seafood, grilled specialties, and upscale casual dining environments.

Demonstrates strong leadership and team management skills, with responsibilities encompassing the training, scheduling, and performance evaluation of kitchen personnel.

Menu planning and costing skills are required, along with the capacity to utilize seasonal and locally sourced ingredients effectively.

Proficiency in food safety protocols, sanitation standards, and regulatory compliance, including HACCP or similar frameworks, is essential.
