We are seeking a qualified candidate to fill this position responsible for overseeing daily operations, managing a team of professionals, and ensuring all projects are completed on schedule and within budget. Key responsibilities involve developing strategic plans, monitoring performance metrics, delegating tasks, and maintaining compliance with company policies and regulations.

Drives organizational success by optimizing key performance indicators, ensuring alignment with strategic objectives, and fostering a results-driven culture. Analyzes financial and operational data to identify trends, uncover inefficiencies, and recommend data-backed solutions for continuous improvement. Collaborates with cross-functional teams to implement performance enhancements, track progress against targets, and drive sustainable growth. Develops and maintains dashboards, reports, and KPI frameworks to provide stakeholders with actionable insights and visibility into business performance.

Attend management meetings to assess advancement toward business plan objectives and collaborate on the formulation of the department’s annual business plan.

Operation

Develop and maintain the departmental Standard Operating Procedures (SOP) manual, ensuring it accurately reflects performance benchmarks, established policies and procedures, and service excellence criteria essential to the seamless functioning of the kitchen. This role involves aligning all documentation with the Hotel’s overarching policies, established standards, and relevant municipal regulations to guarantee compliance and operational efficiency.

Collaborate closely with the Senior Culinary team to spearhead the development of innovative menus and new product offerings, ensuring each initiative is underpinned by rigorous analysis and precise costing.

Responsible for directing the development and execution of impactful food promotions, ensuring strategic alignment with business objectives.

Oversee the upkeep and organization of departmental spaces through consistent weekly inspections, ensuring a tidy and well-maintained environment for all staff and visitors.

To uphold rigorous food safety standards, this role requires strict adherence to the hotel’s food safety and hygiene protocols, including HACCP guidelines, within the department.

You will be responsible for ensuring compliance with food safety and quality standards across all Outlets. This role involves regularly evaluating and overseeing adherence to established food handling, preparation, and storage protocols to maintain high standards of hygiene and safety. Additionally, you will conduct inspections, address any deviations promptly, and provide guidance to staff to uphold these critical standards.

Please ensure that all departmental reports, schedules, standard recipes, menus, food presentation photographs, and correspondence are completed accurately and promptly.

Analyze and assess evolving market demands and consumer preferences to develop innovative food menu strategies tailored to hotel guests and the local community.

Collaborate with the leadership teams of other departments within your designated scope to cultivate and sustain productive professional relationships.

Engage with community representatives and prospective guests as needed to foster positive relationships and address inquiries.

Other Responsibilities

Maintain an exhaustive understanding of all food and beverage services, menu items, preparation techniques, operational outlets, and the hotel’s comprehensive services and features.

Implement stringent adherence to hotel food safety and hygiene protocols, specifically those outlined by HACCP (Hazard Analysis and Critical Control Points), to ensure compliance and mitigate risks.

Possess comprehensive knowledge of hotel fire and life safety protocols, as well as emergency response procedures.
