About The Role
This position is tasked with creating a harmonious interface between the Food and Beverage Services unit and other stakeholders to ensure efficiency in service delivery. The position will also be key in ensuring implementation of company policies as communicated through the Executive Chef and Sous Chef, and also enforcing compliance to the documented operating procedures. The position is very strategically stationed for an individual with real quest for career growth and progression.
Roles And Responsibilities
Reporting directly to the Sous Chef and indirectly to the Executive Chef, the ideal candidate should be competent in the following key performance indicators among others:
Implementing and enforcing the requisite cost control measures right from receiving of raw materials to preparation and dispense stages of food and beveragesIdentifying, advising and justifying to the Executive Chef and Sous Chef the gaps for CAPEX and OPEX
Ensuring Planned Preventive Maintenance (PPM), and fumigation/pest control schedules for the kitchen installations is up to date and duly documented
Ensuring the manuals for existing and envisaged Food Safety Management Systems (FSMS) are in place and enforcing strict compliance to their documented processes
Planning and overseeing execution of material inventory and stock-take, and generating requisite reports
Ensuring kitchen and food cleaning and sanitation materials are cost effective and their composition as per documented Material Safety Data Sheet (MSDS) complies with FSMS guidelines
Organizing and leading the kitchen brigade shifts and generally taking charge of the daily kitchen operations
Maintaining functional teamwork and discipline by engaging positively, energizing, motivating and being a firm but fair team leader
Identifying training needs, documenting and executing the training and mentor-ship programs
Continually reviewing the menu items versus the elements of cost, functionality, and popularity index to maintain relevance and vibrancy
Taking a very proactive hands-on approach to all levels of food and beverages preparation and service to ensure compliance to the documented recipes and portion control, and to internalize eye for detail for the quality and quantity of meals, to the team
Ability to work odd and often long hours including night time while standing, walking, lifting and carrying weights within recommended margins
Qualifications
At least a certificate in food production/culinary arts or related discipline from a reputable institution
Minimum of 6 years experience in a similar or higher position, two of which should be in a busy pastry section of a properly structured food and beverage establishment
Good leadership and interpersonal skills coupled with sound business acumen
Demonstrable experience and skills set for creating a variety of exciting, functional and healthy office and indoor work stations bitings, besides a great repertoire of fresh bakeries, tea break pastries, sweets and desserts, will be a big plus
